We love chia seeds because they're high in fibre and extremely versatile!
You can use them as an egg replacer to make vegan or egg allergy safe meals. You can even use them to make a jelly-like texture in foods, for example pudding. Plus, they're high in fibre, Omega-3's and antioxidants.

Ingredients
- 2 cups of berries (blueberry, strawberry, raspberry or blackberries work well)
- 2 tbs lemon juice
- 2 tbs honey
- 2 tbs of chia seeds
Method
In a pan mix, continuously stir and cook on medium-high heat your choice of berries, lemon juice and honey, until the berries start to soften and/or split.
Take the pan off the heat and mash ingredients in the pan.
Add the chia seeds, stir to combine and continue to heat until the mixture becomes a thick, jelly-like texture. Note, it also thickens a little more once it's cooled.
Bottle into a sterilised mason jar and store in the fridge for you to seven days.
TIP: Play with flavours and use a combination of your favourite berries.
